Wow, what a production from the middle of a corn field! The St. Peter, Illinois Prairie Days has been going on for more than 30 years, and this year featured a barbeque contest that followed national rules/regulations. Though a small turn-out teamwise, fun was had by all...I even got to hang out with TWO County Fair Queens! What a day! Feel free to trek along with me on this, and other adventures, through YouTube. This week, I've decided to share some of these most insightful letters with you: Dear Rib Rubber, I hope you can help us. We have been "tootin' on the circuit" for over 4-1/2 years, and have taken a fair share of medals, ribbons and some actual prize money; but have never reached the pinnacle of GC. Our shortfall, (if I had to pin one down), would be our ribs. Friends have loved them, but I just don’t think they measure up to competition standards. So, I’m wondering if we’re actually rubbing our ribs the right way? Can you help, or offer any suggestions on the fitting way to rub the ribs? DL Forrester, Polen, AR. Dear DL: Great question, and I’m glad you asked. Most folks use a gloved hand, and a hefty dose of plain old elbow grease to both tenderize their ribs by massaging through those tough tendons, and also getting the flavorizing agents deep down into the meat. Works well, but you might try this method, which should give your ribs that extra zing that the judges could be looking for. My trick is to use a hard bristle back scrubber. Yes!. A thickly padded scrub brush, with vigorous handiwork, this common tool doubles as a tenderizer AND get those precious spices way deep down into the meat, and I just betcha, DL, that it’ll give your prized spares the competitive edge which so far has eluded you. I hope it helps.
